I love St. Patty's Day!! So I love doing themed foods and drinks. Typically these recipes are high in fat, so I set out to find something that would work with my diet. I found these Rainbow Rolls... I highly recommend them!




The recipe that I came up with is loosely based on this one from Not Without Salt. I omitted the traditional rice noodles and used a chicken salad dressed instead of the basil lime cilantro dressing. Then I did a julienne of red, orange, and yellow peppers, cucumbers, green onions and purple cabbage to make my rainbow. This was the most time consuming bit, use a food processor with an attachment if you have it. The next step is to soften the rice wrappers in hot water, it takes about 5 seconds. Arrange everything on the lower half of the wrapper, roll tightly and you’re done! Looks super pretty and the kids thought it was awesome!!
